The area of the Ribera del Duero, where the company is located, is a relatively recent area (foundation of the DOC in 1982) but historically it has always been an agricultural area for the production of cereals and beet despite having very historic areas with bushvines
This lack of widespread viticultural culture has led to the application of a “classic” viticultural model of continuous return cuts and renewals on the structure of the plant that affect the progressive deterioration and heterogeneity of vine plants.
The goal of Simonit&Sirch is to change, within the company, this culture of renewal and establish a sensitivity towards respect for the vine plant and its management through the application of Simonit&Sirch Pruning by working on the existing adult vines, by working on existing adult vines and designing the architecture of new vines.
The work on young vines is aimed at creating working models dedicated to the different forms of free training (traditional bushvine, echalas and eje vertical) with a focus on the mechanical management of the vineyards given the size of the company, 180ha, and the big lack of vineyard workers that is being noticed in all the wine-growing areas of Spain.
Over the years, the project has also focused on the management of the canopy, bringing its vision from a French/Bordeaux concept to a system more suited to a climate with many periods of extreme heat that affect the quality of the grapes.
Together with the company, the formation of the first Simonit&Sirch Campus in Spain has begun, with different training systems and structures on tempranillo.
